It’s the beginning of the week and Mondays are…sometimes not fun. We’re brightening up the evening with easy cupcakes!
These are my own constructions, I hope you enjoy.
50g Unsalted Butter
100g Frozen Raspberries (I’m sure you can use fresh, frozen ones are cheaper)
130g Self Raising Flour
Microwave the raspberries for 30 seconds or so until defrosted, then mash them with a fork.
Combine the butter and sugar until smooth, fold in the raspberries.
Sift and fold the self raising flour bit at a time. Add the milk and gently stir again.
Pop in the oven for 15-20 minutes at 180c or until springy and golden on the top.
Bright and tasty! We thing these are good for spring. Hopefully you enjoy these, they are cheap and easy to make.
