Elfy Chutney

As promised, our chutney recipe!  I amalgamated 3-4 different recipes to adapt to what I had in the cupboard.

Chutney Recipe

Roughly Chopped Apples


Ingredients
700gm Apples chopped and peeled
4 Onions roughly chopped
4 Tomatoes roughly chopped
300ml White wine vinegar
300gm White sugar
1 tbs salt
1 tbs Mustard seeds
2 tbs chilli flakes
3cm of ginger finely chopped


Method
In a large pot, combine the apples, onions, tomatoes, vinegar and sugar and simmer for a few minutes.  Add the remainder of the ingredients and simmer for approximately 1.5 hours.

When you stir the mixture, your spoon should leave an indentation that stays for a few seconds.

Sterilize your jars with boiling water, don’t forget the lids.

Chutney

Spoon the mix into the jars, avoid touching the outsides of the jars. Leave a little gap at the top of the jar (1cm is enough) then seal up.  You will need to leave the chutney to mature for a couple of months.
